It’s strange that the first word people think of when they hear the word “borsch” is “ew.” Most people haven’t even had real borsch before! Borsch (sometimes borscht or borstch) a thick, beet-based soup from Eastern-Europe (indeed– it’s the national dish of Ukraine!). When made correctly, it is the epitome of what you want on a cold day. It’s loaded with vegetables and meat– each imparting a flavor into the whole which is complex and delicious. It’s usually accompanied with a dollop of sour cream and a sprinkling of fresh dill. It gets its unique sweet/sour flavor from the addition of a small amount of vinegar to offset the sweetness of the beets.
Occasionally you’ll see it served cold. I cannot stand behind cold borsch all the time. I much prefer it hot! The only time I like cold borsch is when it is prepared from the beginning to end, the whole time intended to be a cold borsch– usually with a decent amount of sour cream mixed in so it is a velvety light pink. Cold borsch intended to be hot doesn’t do it for me.
New York has recently gotten its first strain of hot, humid weather. The thing about New York and hot, humid weather is that once it happens, you pretty much know it is here to stay until well into September.
I hate hot, humid weather.
The very idea of preparing a hot pot of borsch, even with the intention of serving it cold, made me faint with fatigue. So I devised a less heat-causing method to enjoy this delicious dish– in the form of a salad!
It might seem strange transforming a hot soup into a cold salad– but I am rather pleased with the result.
It has everything I like from borsch: tons of vegetables, lots of dill, and a great salty and vinegary dressing perfect for any Spring or Summer dinner.Oh, and there’s no hot pot to stir!
When I made it to be photographed, I used only the bare “borsch” basics: cabbage, beets, vinegar, dill, beef. However, this salad only gets better with additions. Think sliced carrots, chopped boiled potatoes, a dollop of sour cream, fresh garlic, sliced celery, chopped hard-boiled eggs, the list is endless!Indeed, I have it on good authority that in Ukraine, borsch could be either a soup so thick that it could be a stew or a thin beet broth, with just the merest hint of vinegar. Experiment!
- 1 Napa cabbage, chopped into smallish pieces
- 1 lb.steak of choice, preferably thinly cut
- 1 cancooked beets (drained), or 2-3 small beets, baked then skinned– all chopped to small cubes
- few pinches of ground allspice
- few tablespoons of vinegar (white wine vinegar is a great touch!)few table spoons of olive oil handful of fresh dill
- Fusilli made with Imperia pasta machine or any other similar device.
- 1 clovegarlic, very finely mincedsalt + pepper
Preheat a nonstick frying pan on medium. Rub down the steaks with salt, pepper, and the ground allspice. When the frying pan has heated up, put the steaks in– no oil or butter! Cook the steaks until medium-well; it should only take a few minutes on each side.Let the steak rest a few minutes while you’re getting the rest of the ingredients together. Mix together the cabbage, beets, garlic, and some chopped dill. Once the steak has rested for a few minutes, slice into thin strips (or cubes, as you wish) and mix into the other ingredients– try to collect as much of the juices from the cutting board to pour into the salad.Add olive oil, salt, and vinegar to taste– it should have a vinegar-y tang to it, to offset the sweetness of the beets. Let chill in the fridge for an hour or so before serving. Top with more fresh dill just before serving.

Last week I wrote about how I was having a particularly hard time with a project for my photography course. The project was “Street Fashion” and the idea was to take an image that could illustrate an article about how designers take inspiration from what people are wearing on the street. I immediately thought of the street style blogs like The Sartorialist and Facehunter and how they take photos of cool looking people on the street. I also understood that the purpose of this project was to get us interacting with real people and forcing us to take ownership of the role of photographer. I got all of that, but I just couldn’t do it. The idea of asking a stranger if I could take their photo, and a cool looking stranger at that, just horrified me. I felt ill at the very idea. People are not my favourite photographic subjects anyway. I much prefer taking landscape, architecture and cityscape photos. I’ve worked on my portraits a lot in the past year or so and I think I have improved dramatically in the way I direct a model, but I just cannot bring myself to ask passers by if I can take their photo. I spent at least a week feeling horrible about this. I thought about all the reasons why I should force myself to do it. It was a barrier that needed breaking down. I needed to expand my comfort zone. I needed to learn to be braver. I needed to learn to be good at all things if I was going to be successful as a photographer. Then I listened to an interview with Danielle Laporte (which I wish I could find again) where she was talking about Balance and whether Picasso or Einstein or anyone else who is truly great at what they do ever gave a damn about Balance. Suddenly I started wondering why I was really feeling so crappy about myself. I came to realise that the only way I was going to be able to do this would be by forcing myself. By holding my nose and just doing it, and then doing it again and doing it again. I can’t explain why, but that just didn’t seem right to me. It didn’t feel right to be so aggressive with myself. I’m brave. I take tough steps. But there are some things that just take a little longer. I took two years to leave my job. If I had forced myself to leave as soon as I knew I wanted to, my life would have gone in a completely different direction. Maybe it would have been worse, maybe it would have been better, but it would have been different. Personally I think I left exactly when I needed to. I had to spend that couple of years building my courage and my skills, changing my thought processes and examining how it was that I’d come to be doing something that made me so unhappy. I didn’t take the advice of other people. I listened to my own intuition, knowing that, for better or worse, I would have to live with the consequences and I left when it was right for me. But I did leave. So I could have forced myself to find a stranger and ask to take their photo. I would probably have come out of it with a pretty average image, pretty similar to everyone else’s. But instead, I chose to listen to that voice inside me that said I didn’t need to do it, and so I had to come up with a creative way to fulfill the brief instead. And that plays to my strengths of loving the thought process around an image, and wanting to have a strong message to communicate. A message that goes beyond “look at this dude and his crazy shoes.” This is the image I submitted, and I’m pretty proud of it. I think it’s far better than anything I could have taken of a stranger on the street. I came up with a concept, found ways to execute it, even when my skillset wasn’t quite up to it, and flexed my creative muscles in the process. Instead of this project being a miserable baptism by fire, I really enjoyed it. I felt inspired by it. Okay, so I didn’t face my fear of taking pictures of strangers, but I listened to my own intuition and I honoured myself, knowing the difference between stretching your comfort zone and using your fears as a stick to beat yourself with. Growing and expanding isn’t always about facing your fears head on. Sometimes it’s about acknowledging and understanding. Sometimes it’s about honouring the things you cannot yet do. There’s a time to be tough with yourself and a time to be gentle. All of this reminded me of something I was sharing with my yoga class a couple of weeks ago about acknowledging where you are in the process right now, about loving your body for what it can do and knowing that, although there are many more things it will be able to do with practice, right now you are exactly where you need to be on the journey. And so it is with my own life. Not once have I said to myself that my inability to do the splits is just a question of fear and I need to break through and just do it. To do so would be dangerous. It would be denying the difficulty of the pose, and ignoring the practice it takes to get there. Difficult things are difficult for a reason. Really difficult things are really difficult for a reason. By all means step away from things that don’t serve you, but don’t be too tough on yourself. Have patience. Like everyone else, you’re doing the best you can.

The state of Nevada finally release the possible list of all marijuana medical operators who have been provisionally approved to process for the license of legal sales of marijuana from at the end of this fiscal year. Although the list was released, but the final list who will get the license is still in the mist, and most of the companies have decided not to reveal their identity to public, as it seems from the list. In the total of 55 licenses provisionally approved, 37 refused to reveal their names as an applicant, leaving the rest of 18 applicants who are public to show their identity.
Although most of documents which are disclosed by state agencies are released as a public record, everything clear as a winter sky, this motion of legalization of marijuana is considered as a special case, and thus is released under special partly confidential report. The full names of applicants will only be visible to public if all the companies who applied for the commercial sale of marijuana agrees to it, according to a spokesman of Department of Health and Human Services. This provision was present in the Nevada’s law on medical marijuana which was passed in 2013, although this law has been broadened to include keeping secret of any type of marijuana applicants information to the public, unless they say otherwise and ready to make them public.
The list released by Nevada state containing of all marijuana medical operators applicants, with their names and scores will have direct impact in the upcoming year of 2015. From the beginning of next year they will start opening dispensaries after getting cleared of final license to sell of marijuana for commercial purpose. Applicants who are provisionally approved from the state jurisdictions will still have to apply for business license for sales and also zoning approval in the area of their dispensaries to the local authorities.
The number of applicants receiving provisional license is one fourth of the medical operators who had applied for the same. As reported by MrVapo research, out of 199, only 55 were cleared by the state to have marijuana license, who can open dispensaries to sell medical marijuana to their patients. The law in Nevada state has limitations on how many dispensaries can be there in any country, for example no more than 40 dispensary licenses are allowed in Clark County. Although there is a limitation of number of dispensaries, but no applicants have submitted application till date to open any dispensary in the 11 rural countries of the states.
Along with dispensaries as storefronts to sell marijuana, the state of Nevada also approved 182 numbers of licenses for the cultivation process of marijuana, where it will be farmed and grown. A total number of 117 licenses are approved for production of marijuana, where it will be researched to produce edibles infused by marijuana, and its concentrates. Another 17 licenses were approved for full fledged personal laboratories, which will work as quality controller of medical marijuana.

This will be compared to the number of men on a regular basis. The fact is that men have been out ranking women in the number of women that have decided to straddle a motorcycle and hit the open road. The numbers used to be as low as 5% and as high as 45%. Over the course of the last few years, more men have got onto motorcycles as so has more women. This increase has been attributed to a number of factors that will be looked at in this article.
It seems that these days there are a lot more female riders than there used to be. It was a case that back in the day, men were the main gender that rode motorcycles and women were merely passengers. These days that has changed and more and more females are experiencing the joys that riding a motorcycle has to offer. There is nothing quite like the feel of the wind in your hair and the smell of the open road to make one feel as close to be free as one can get. About 15% of the riders on the road are women and this number seems to increase in a large jump from time to time. The main reason for the increase is that motorcycles are being designed more with the female in mind and is not being limited to just for men.
Back in the day it was almost uncommon to see a woman on a motorcycle, it was just not popular and the bikes seemed to be built with a man in mind. Then the resurgence in an interest in motorcycles led to a large number of women being seen on these bikes and their popularity soared. Many riding clubs are popping up that are designed for women strictly. These clubs work with others in their area to coordinate rides on weekends to help and build a stronger following. Back in 2012 the percentage of women that owned bikes was around 32% in the first half of this year, this number jumped to 38%. the reason for this spike is related to popular television shows as well as a number of websites and Facebook pages that are geared towards the female crowd. These allow for the woman to feel that she is getting the same amount of exposure as her male counterpart.
Makers are getting the clue and are taking measures to develop and create motorcycles that are geared towards the female rider. These motorcycles are designed in a way that makes the woman feel that she has a motorcycle that is different than the men’s model. The number of models has increased over the last several years. In 2008, there was about 16% of the bikes on the road that were created for a female rider. This number has risen to over 25% in the first part of 2013, in that time more women are hitting the road on their own bikes and are not satisfied with just being a passenger anymore.
Regardless of the reasoning behind the increase, the one thing that should be looked at is that more and more women are getting on motorcycles and are taking to the road just as much. This trend will continue for the next few years as it is expected by 2020 the number of women that are on motorcycles will have risen to almost 50%. This increase will mean that at bike rallies and on the highways touring will be an increased number of women.
